Spring Mix Salad with Poppy Seed Dressing
Spring Mix Salad can be made very simply and you can make different versions. All ways are fancy and make a summer day meal fun and delicious to share with friends and family.
Spring Mix Dressing
Small glass jar with a lid
and measure spoons and cups
salad bowl and tongs
1 bag of Spring mix Salad
1 cup of mayo
2 tablespoons of poppy seeds (fresh as possible)
1/3 cup of white vinegar
4 Tablespoons of white sugar (use honey if you like instead)
pinch of salt
Must have for the Salad – Toasted Almonds with Brown sugar
Toast sliced almonds with some light or dark brown sugar. I toast in the toaster oven on toast mode for about 2 minutes. You want the almonds to be lightly brown and you can smell the brown sugar baking with the almonds. It’s a wonderful nutty smell of sugar and almonds. Take it out and allow it to cool before you use it on the salad. You can make this a day in advance. You can also seal the extra almonds in a ziplock bag to use again.

Making the Salad Dressing
Take all the ingredients
Measure out mayo, poppy seeds, white vinegar and sugar, then place into a glass jar. Add a pinch of salt and shake the ingredients together until it’s combined. Taste the dressing and adjust until it is to your liking. You may want to add more sugar to make it sweeter or add more mayo if it’s too thin. I like mine a little more sweet, so I add more sugar some times. A bit of honey also can be substituted for the sweetness.
Once it is mixed, allow it to chill in the refrigerator for at least an hour or more. Once it is cold you can mix into the spring mix salad. Very simple summer salad that will enhance any meal or party.
