Whole30: Orange Chicken

Orange Chicken

Whole30 allows for us to use 100% pure juice for flavoring a dish. I took that idea and made orange chicken with, diced sweet potatoes, broccoli, and onions. I use 100% freshly squeezed orange I get at the local supermarket. It’s easy and anybody can swipe it up but it takes a little bit of time if you want really popping flavors. This dish has protein, vegetables, and starch.

Recipe serves 3-4 people

Ingredients

2 lbs of chicken breast cubed

Marinade

1 Tablespoon of coconut amino

1 teaspoon of minced garlic

1/2 teaspoon of salt and pepper

1 teaspoon of sesame seed oil

1 teaspoon of Apple cider vinegar

Stir-fry Ingredients

Marinaded cubed chicken

2 oz of broccoli

1 small onion

1/2 of a cubed sweet potato

1 cup of orange juice

1 Tablespoon of tapioca starch

Extra virgin olive oil, or Virgin coconut oil

Procedure

Step 1 ) Cube the chicken breast and marinade it in coconut amino, minced garlic, salt, pepper and sesame seed oil. Place into the refrigerator for about 1 hour to overnight is best.

Step 2 ) After the chicken has been sitting in the marinade for at least 1 hour it’s time to prep the other vegetables.  Peel half of the sweet potatoes and then cube it. Dice the onions, and chop up the broccoli into bite-size pieces. You can measure the orange now or later.

Step 3) Using a wok or deeper saute’ pan on the burner and heat it to medium-high heat. Add cooking oil to lightly coat. Wait about 1 minute before you toss in the cubed chicken.

Step 4 ) Gently add the cubed chicken to the pan, it may splatter. Place a cover on it and let it cook for about 3 minutes. Then add in the cubed sweet potatoes, diced onions, and chopped broccoli. Cover it again and allow for it to cook for another 3 minutes.

Step 5)  Using a liquid measuring cup measure 1 cup of freshly squeezed orange juice. Set it aside.  Then take a small mixing bowl and measure out 1 tablespoon of tapioca starch and dissolve in 2-3 tablespoons of cold water. If you like you can add just a splash of the 1 cup of orange juice to the slurry.  Then set it aside.

Step 6) Finally, add the orange juice to the chicken and vegetables, turn the heat on medium-high heat temperature and add the slurry. Mix well and watch for it to thicken up. Once the sweet potatoes are tender and broccoli has been cooked through turn off the heat and serve it up immediately.
