It’s not Asian dessert but Asians we love apples and we love to eat in the raw and in the baked form. And we love recipes that are easy to make when it comes to apples. So please enjoy this upside down apple pie recipe.
2 cups of flour ( bread flour or all purpose)
1/2 cup of flour for dusting
1 tsp of salt
4 TBsp of Cold unsalted butter
1/2 cup of Ice cold water
Using a food processor I cut the cold butter into the flour along with the salt. Add the cold water little bit at a time until the flour comes together as a dough. Take the dough out wrap in plastic wrap and refrigerate it for about 30 minutes.
3 TBsp of Unsalted butter
4-5 large apples peeled
1/4 cup of brown sugar
1/4 cup of granulated sugar
1/2 tsp of ground cinnamon
secret ingredient is 1/4 cup of potato starch!
First step Preheat oven to 350 degrees
- Peel and cut all the apples into thin and slice length wise. Place the sliced apple into a bowl and toss cinnamon and sugar, coat evenly. Then toss in about 1/4 cup of potato starch. Leave it alone move onto next steps.
- In the mean time taking a cast iron skillet place onto the stove burner. Turn the burner on to a medium high heat. Add in some cold butter you want to melt but not burn. So be watchful and add the apples as soon as you see it melted. Turn the heat down to medium. At this time take out the pie crust dough and flatten out as much as possible. ( 1/4 inch thick)
- Cover the apples with the crust dough and tuck in the open gaps. Cut a center slit into the pie crust. Place the skillet into oven and let it bake for about 15-20 minutes. You’re looking for a golden brown to the crust.
- When the crust is golden brown color take it out of the oven and allow to cool on the stove or counter for about 10-15 minutes. Take a plate place it over the the skillet pan and turn over the tart onto the plate and the tart should slide off easily in one piece. It a delicious upside down apple pie that goes great with some à la Mode!
