Spring Onion Pancakes
Spring Onion Pancakes with Chives and Cilantro (AKA Green Scallion Pancakes)
- 13 ounces of All Purpose Flour
- green onions/scallions (a bunch. i.e., approx. 4-5 stalks thinly chopped)
- sesame oil (you’ll need it as we make the pancakes)
- 1 TBSP of kosher salt
- More salt on hand for later
- food brush (use a paper towel)
- measuring scale
- cutting board
- measuring spoons
Step by Step Instructions
Start by measuring the all-purpose flour, and set out all the other ingredients on the counter. Ingredients within easy reach is key to making cooking easier.

Step 1 – Mix the dry and wet ingredients to form a dough together. Now knead it for about 7 minutes until the dough is no longer sticky. Next allow the kneaded dough to rest for 30 minutes in a bowl. Cover the bowl with plastic wrap and a dry towel.
Step 2 – In the mean time prepare the filling for the pancakes. Chop the spring onions, chives and cilantros set it aside.
Step 3 – Divide the dough into four round dough balls (about 5 ounces each.) If you don’t have a scale, that’s okay. Just divide the dough into four round balls.
Step 4 – Take one dough ball and flatten it out using a rolling pin. Next, brush sesame seed oil on one side. Take the flatten dough and roll it into the shape of a cigarette shape. Next take one end of the dough and fold into a snail shell shape. Repeat this procedure with each dough ball.
Step 5 – Take your frying pan or non-stick pan and place it on a burner. Turn the stove on to medium high heat and allow it to heat up. Have the cooking oil ready for cooking.
Step 6 – Flatten out the snail shaped pancake with a rolling pin. Brush the sesame seed oil onto the flattened pancake and sprinkle some salt and pepper over the pancake (i.e., the side that you brushed with oil) and add the spring onions. Roll it up again like a cigarette and twist it into a snail shape once again. Set aside.
Step 7 — Take the spring onion roll and flatten it out once more. Add some cooking oil to the frying pan and cook the pancake one at a time about two minutes each side. Lower the heat just a bit to make sure the pancakes don’t burn.
Step 8 – Remember to flatten each spring onion pancake out to about 1/8 inch thick. You can go thicker if you like.
Step 9 – Cut into four equal parts. Serve it hot or cooled down. It is really up to you. Welcome Spring!
