Kimchee Fried rice ( revised version)
The secret is out butter and kimchee make a good marriage of flavors. An incredible fragrances comes out when you satuee’ a bit of butter and kimchee together! It’s very exciting combination but it’s used in recipes like kimchee fries. So I thought if this goes great on fries why not as a fried rice? This kimchee fried rice recipe is simple and easy to make. Make sure the rice is already cook that would save a lot of time. This is a great recipe for lunch, dinner or for a potluck.
Ingredients serves about 8 people
3 cups of cooked Korean short grain sticky rice
2 cups of chopped kimchee
2 stalks of scallions
1 TBSP of Unsalted butter
2 tsp Furikake
1 tsp of minced garlic
salt, white pepper, soy sauce, sesame seed oil
Step1. Taking a frying pan or a non-stick wok, heat it to medium high and let it warm up for about 1 minute. Then taking a bowl crack 2 eggs add pinch of salt and whisk it well. Add 1 tsp of oil to the pan and make a quick scramble egg or simple omelette it’s up to you. Either way when it’s done cooking you place into a dish and put it aside for later.
Step 2. Turn the heat back onto medium high heat and add 1 TBSP of unsalted butter and as it melts add the chopped kimchee to the butter and stir fry it. You may at this time add some soys sauce, sesame seed oil and 1 tsp of minced garlic and stir that together.
Step 3. After the butter and kimchee have been cooking for about 3-5 minutes you can add the rice and combine thoroughly. Add the scallions and allow the heat to cook the scallion just a little bit. You want that green color but you don’t want a strong raw onion flavor. You can have a strong onion flavor if you like but I guess I don’t care for it.
Step 4. Add the scrambled egg and break up into the the rice and kimchee add pinch of salt and white pepper. Sprinkle some Furikake on top and serve it up immediately. Some people like to have roasted seaweed to wrap it up and eat with it. However I added Furikake to it on top so you might want to do that. It’s has a basic simple flavors but it’s a great marriage of flavors it’s good for people who are trying to eat less meat. If you’re a vegetarian I say don’t use the eggs and make sure you replace soy sauce with tamari sauce. Enjoy this dish any many others on this blog!
