Whole30: Plantains with Mejool dates
Yellow plantains and medjool dates are naturally sweet foods that help to make the whole30 journey sweeter along the way. I am so grateful for these delicious ingredients to make a sweet side dish with my meals. Medjool dates can be found at whole30 market and plantains are found at any international produce market in your neighborhood.
Ingredients serving 2-3 people
1 large yellow plantain
2 Medjool dates
1/2 teaspoon of cinnamon spice
1- 2 Tablespoon of ghee or Extra virgin olive oil
Step 1 ) Place a cast iron skillet onto the burner and turn the temperature onto medium-high heat. In the meantime prepare your plantain and dates
Step 2) Deseed the dates, they have one pit inside of it. Peel the plantain and cut them into slices.
Step 3 ) Add 1-2 tablespoon of ghee or extra virgin olive oil let it get hot for about 1 minute.
Step 4) Place the plantains into the hot skillet let it brown on both sides add the medjool dates at this time and flip over the plantains so they don’t burn. you want it brown and a little crispy but not completely burnt. You may add a little sprinkle of cinnamon spice.
Step 5 ) Turn off the eat and enjoy it hot or after it cools down with your whole30 meal.
