How to Cut Flank Steak

How to cut flank steak correctly! Yes I might’ve done a post on this before but hey let’s do it again. We always hear when you want to cube or cut steak for any stir-fry dish you must cut against the grain or your meat may be very tough and chewy.  So let’s get started!

Exhibit A – Flank Steak

First step, make sure you have good lighting on before you cut anything on the cutting board and use a sharp chef’s knife.

Next place your raw flank steak on the cutting board and look at the lines.  You need to make sure you cut in the opposite direction on a slant to break-up the tissues.

Flank Tender Cuts

Now look at the slice it should be floppy and tender, now you’re ready to marinade it for a stir fry dish of your choice! Here are some marinades you can use for a yummy stir-fry! If you’re using fresh vegetables, make sure you clean them well, chop and blanch vegetables like broccoli or carrots before you use in a stir fry, so they cook through. Rice or noodles  is always a wonderful pairing with a stir-fry dish.

Taking a mixing bowl, I like to use a plastic container with a lid and pour the marinade in that first, before I pour the marinade into a zip lock bag with the meat inside, then refrigerate and allow meat to marinade and get flavorful.

Basic Chinese stir fry marinade for flank steak – 1 lb. of flank steak cubed or sliced.

1 teaspoon of Shaoxing wine

1 teaspoon of sugar

1/2 teaspoon of sesame seed oil

1/2 teaspoon of cooking oil

1 Tablespoon of Light soy sauce

1 Tablespoon of dark soy sauce

1/2 ounce of slice ginger root, leave the peel on it.

1/2 ounce of freshly minced garlic

1 teaspoon of cornstarch

Mix it all together and let it marinade in the refrigerator over night or at least 2-3 hours, before cooking it in the frying pan or wok.


Basic Korean Stir-fry marinade  1 lb. of Flank steak sliced

1/2 cup of coke cola

1/3 of a cup of brown sugar

1 Tablespoon of Sesame seed oil

1 Tablespoon of soy sauce

2 teaspoons of soju or white cooking wine, sake is good too.

2 stalks of clean scallions sliced up roughly

2 ounces of freshly minced garlic

Mix together in a container and place the sliced beef inside the container or a zip-lock bag and seal it tightly with no air. Let it marinade over night or at least for 2-3 hours for best flavor! This recipes is also wonderful if you want to grill it in tin foil  or directly on a grill pan.

Beef stir fry dish with Chinese sausage, peas, carrots and onions with lots of gravy!
